Giri

Giri, mountain in Sanskrit

Named for the peak above the estate. Elevation, strength, and the finest expression the ridge gives us.

Giri is named for the mountain. It comes off the highest rows on the ridge, where the nights run coldest and the fruit takes longest to come in.

It is the smallest of the three lots for the same reason it is the most complete: the ridge decides how much of it there is in a season, and we take what it gives.

Nothing is added because nothing needs to be. The sweetness at 1400 metres was grown into the bean; it was never stirred in afterward.
